No-Bake Protein Energy Bites
I am always on the search for healthy snacks for my family. I have been trying to incorporate more meat-free protein sources and fiber into our foods with less starches and wheat.
Being able to disguise healthy ingredients in the form of cookies, muffins, brownies, and smoothies makes me certain my hubbie and kids will actually eat them, and also makes me the hero to my kids when they are allowed a third cookie or brownie! I have been working on perfecting my Black Bean Brownie Recipe and I sneak hemp seeds and avocado into fruit smoothies too.
After browsing many recipes I came up with a cookie recipe I really like, and I want to share it with you today! This No-Bake Protein Energy Bites recipe adds lots of protein and energy rich ingredients to your day in a bite size. Good for hiking, biking, or a quick pick-me-up.
Plus it is great to make with kids as it requires no oven or stovetop time and it is fun to mix and shape it with your hands!
No-Bake Protein Energy Bites
2 ½ cups Quick Oats
½ cup ground Flax Seed
¼ cup Hemp Seed
2 Tbsp Honey
2 Tbsp Powdered Milk
1 ½ cups Peanut Butter
Optional add ins: mini chocolate chips, nuts, dried fruit, etc.
Directions: Combine all ingredients into a bowl and mix well (You can use your hands!) Then roll into balls and flatten slightly into a cookie shape.
These store well in the fridge and taste good straight out of the freezer too.
Note: I just made the basic recipe with no add-in’s (this time!), but I am keeping my eyes out for some dark chocolate mini chips because everything tastes better with a bit of dark chocolate!
